Buckeye Bars – No Refined Sugar

Ever crave that deliciousness that comes from the combination of yummy peanut butter and chocolate in buckeye bars? I do. That is one of my favorite combinations for dessert. When I started the refined sugar fast, I thought I would be giving up that flavor combo for the whole month.

Luckily, I found a recipe for buckeye bars, that did not include refined sugar. The recipe I started with came from the blog So Much To Make. As usual I have made some simple changes to match the ingredients I have available.

Buckeye Bars - No Refined Sugar

Bars with a peanut butter layer under a chocolate layer, made with no refined sugar


    Peanut Butter Layer:
  • 1 1/4 cups natural peanut butter (creamy or crunchy)
  • 1/3 cup softened butter/margarine, or coconut oil
  • 1/4 cup real maple syrup
    Chocolate Layer:
  • 1/3 cup butter/margarine, or coconut oil
  • 1/3 cup cocoa powder
  • 1/4 cup real maple syrup
  • 1/2 teaspoon vanilla


  1. Prepare a 8×8 or 9×9 inch square baking dish by lining it with a sheet of parchment or wax paper covering bottom and sides
  2. In a medium mixing bowl, mix peanut butter, margarine and maple syrup until smooth.
  3. Spread in the prepared pan
  4. Place in refrigerator or freezer to set.
  5. In a small mixing bowl, whisk together melted margarine, cocoa powder and maple syrup.
  6. Stir in vanilla.
  7. Spread chocolate mix over chilled peanut butter layer.
  8. Return to fridge or freezer to set.
  9. Once bars are chilled (after 1 hr+), use a sharp knife to cut into bars.
  10. Store in an airtight container in fridge or freezer.


Keep the bars in the freezer. The longer they stay in the freezer, the more set the bars will get.



These bars were absolutely delicious and rich. The chocolate layer has a distinct dark chocolate flavor. While not exactly like an original buckeye, these buckeye bars taste wonderful. I used creamy peanut butter, so the peanut butter layer was sweet and very creamy. Next time I would like to use either crunchy peanut butter or add something to give it a slight crunch.

My husband felt that the buckeye bars tasted good, but he did not eat many. He felt that the flavor was too rich for him. My children have devoured it, especially the chocolate layer. I know they liked it, since they asked for more.

A hit with the family, I would definitely make this again. As mentioned I would add a little crunch for taste. Hopefully that would help set the peanut butter easier as well. Enjoy this wonderful recipe.
